Citrus Herb Grilled Halibut


 

Ingredients:

  • 4 halibut fillets (about 6 ounces each)

  • 1/4 cup olive oil

  • Juice and zest of 1 lemon

  • Juice and zest of 1 orange

  • 2 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon fresh thyme, chopped

  • Salt and pepper, to taste

  • Lemon and orange slices, for garnish

  • Fresh herbs, for garnish (optional)

Instructions:

  1. Prepare the Marinade:

    • In a bowl, whisk together the olive oil, lemon juice, orange juice, lemon zest, orange zest, minced garlic, parsley, dill, thyme, salt, and pepper.

  2. Marinate the Halibut:

    • Place the halibut fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fish, ensuring each fillet is well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  3. Preheat the Grill:

    • Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.

  4. Grill the Halibut:

    • Remove the halibut from the marinade and let any excess marinade drip off. Place the fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Be careful not to overcook.

  5. Serve:

    • Transfer the grilled halibut to a serving platter. Garnish with lemon and orange slices, and sprinkle with additional fresh herbs if desired.

  6. Enjoy:

Tips:

  • For added flavor, you can also grill some vegetables alongside the halibut.

  • If you don’t have fresh herbs, dried herbs can be used, but fresh will provide a brighter flavor.
