Lemon Butter Halibut with Asparagus


 

Ingredients:

  • 2 halibut fillets (about 6 ounces each)

  • 1 bunch of asparagus, trimmed

  • 4 tablespoons unsalted butter

  • 2 tablespoons fresh lemon juice

  • Zest of 1 lemon

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Asparagus:

    • Place the trimmed asparagus on a baking sheet.

    • Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat.

    • Spread the asparagus in a single layer and roast in the preheated oven for about 10 minutes, or until tender.

  3. Prepare the Lemon Butter Sauce:

    • In a small saucepan, melt the butter over medium heat.

    • Add the minced garlic and sauté for about 1 minute, until fragrant.

    • Stir in the lemon juice and lemon zest. Remove from heat and set aside.

  4. Cook the Halibut:

    • While the asparagus is roasting, season the halibut fillets with salt and pepper on both sides.

    • In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat.

    • Add the halibut fillets and sear for about 3-4 minutes on each side, until golden brown.

    • Pour the lemon butter sauce over the halibut fillets.

  5. Bake:

    • Transfer the skillet to the oven and bake for an additional 5-7 minutes, or until the halibut is cooked through and flakes easily with a fork.

  6. Serve:

    • Plate the roasted asparagus and top with the halibut fillets.

    • Drizzle any remaining lemon butter sauce over the top.

    • Garnish with chopped parsley and serve with lemon wedges on the side.
