Ingredients

  • 4 halibut fillets (about 6 ounces each)

  • Salt and pepper, to taste

  • 1/2 cup all-purpose flour (for dredging)

  • 3 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 1/2 cup dry white wine (such as Sauvignon Blanc)

  • 1/4 cup fresh lemon juice (about 2 lemons)

  • 2 tablespoons capers, rinsed and drained

  • 1 tablespoon fresh parsley, chopped (for garnish)

  • Lemon slices, for garnish

Instructions

  1. Prepare the Halibut:

    • Pat the halibut fillets dry with paper towels and season both sides with salt and pepper. Dredge each fillet in flour, shaking off any excess.

  2. Cook the Halibut:

    • In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-high heat. Once the butter is melted and bubbling, add the halibut fillets to the skillet. Cook for about 4-5 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the skillet and transfer them to a plate. Cover loosely with foil to keep warm.

  3. Make the Piccata Sauce:

    • In the same skillet, add the remaining tablespoon of olive oil and the white wine. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Allow the wine to reduce by half, about 2-3 minutes.

    • Stir in the lemon juice and capers, then add the remaining 2 tablespoons of butter. Whisk the sauce until the butter is melted and the sauce is slightly thickened, about 1-2 minutes.

  4. Combine and Serve:

    • Return the halibut fillets to the skillet, spooning the sauce over the fish to coat. Cook for an additional minute to heat through.

    • To serve, place the halibut fillets on plates and drizzle with the caper-lemon sauce. Garnish with chopped parsley and lemon slices for a fresh touch.

Enjoy your Halibut Piccata with Capers and Lemon, a dish that brings a taste of Italy to your table with its vibrant flavors and elegant presentation!
