Spicy Mango Salsa Halibut Tacos

Ingredients:

For the Halibut:

  • 1 pound halibut fillets

  • 2 tablespoons olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • Salt and pepper, to taste

  • Juice of 1 lime

For the Spicy Mango Salsa:

  • 1 ripe mango, diced

  • 1/2 red onion, finely chopped

  • 1 jalapeño, seeded and minced (adjust for spice preference)

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt, to taste

For the Tacos:

  • 8 small corn or flour tortillas

  • Optional toppings: avocado slices, shredded cabbage, lime wedges, and extra cilantro

Instructions:

  1. Prepare the Halibut:

    • In a small bowl, mix together the olive oil, chili powder, cumin, paprika, lime juice, salt, and pepper.

    • Rub the spice mixture over the halibut fillets.

  2. Cook the Halibut:

    • Heat a grill or skillet over medium-high heat.

    • Cook the halibut for about 4-5 minutes per side, or until it flakes easily with a fork and is cooked through. Remove from heat and let it rest for a few minutes.

  3. Make the Spicy Mango Salsa:

    • In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix gently to combine. Adjust seasoning to taste.

  4. Warm the Tortillas:

    • In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side, or until pliable.

  5. Assemble the Tacos:

    • Flake the cooked halibut into bite-sized pieces.

    • Place a portion of the halibut on each tortilla, top with a generous spoonful of spicy mango salsa, and add any optional toppings you desire.

  6. Serve:

    • Serve the tacos immediately with lime wedges on the side for squeezing over the top.

Enjoy your Spicy Mango Salsa Halibut Tacos! They are perfect for a fresh and flavorful meal.
