Ingredients:
-
4 halibut fillets (about 6 ounces each)
-
1 cup cherry tomatoes, halved
-
1/2 cup Kalamata olives, pitted and sliced
-
1/4 cup red onion, thinly sliced
-
3 cloves garlic, minced
-
1/4 cup fresh parsley, chopped
-
1/4 cup olive oil
-
1 tablespoon lemon juice
-
1 teaspoon dried oregano
-
Salt and pepper, to taste
-
Lemon wedges, for serving
Instructions:
-
Preheat the Oven: Preheat your oven to 400°F (200°C).
-
Prepare the Baking Dish: In a large baking dish, combine the cherry tomatoes, olives, red onion, garlic, and parsley. Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper. Toss everything together until well combined.
-
Add the Halibut: Place the halibut fillets on top of the vegetable mixture in the baking dish. Drizzle a little olive oil over the fillets and season with salt and pepper.
-
Bake: Bake in the preheated oven for about 15-20 minutes, or until the halibut is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
-
Serve: Remove from the oven and let it rest for a few minutes. Serve the halibut with the roasted vegetables and a wedge of lemon on the side.
Tips:
-
You can substitute halibut with other firm white fish like cod or snapper if desired.
-
Feel free to add other Mediterranean ingredients like capers or artichoke hearts for extra flavor.
